Easy Instant Pot Roast Beef (Tenderly Pulls Apart)
Instant pot roast beef can be a quick and healthy dinner! The Instant Pot pressure cooks the beef to the perfect point where the meat tenderly pulls apart. I chuck in a few loosely diced vegetables I have on hand and within an hour I have a delicious homemade meal.

We make instant pot roast nearly once a week. This is because pot roast has become “that meal”, which I make when I’m out of ideas. It became “that meal” because it is delicious every time and makes for a quick healthy dinner that satisfies all.
Tools you may need

Instant Pot Roast Beef Recipe Ingredients
- Beef Roast
- Garlic
- Salt
- Papper
- Vegetables (my favourites are carrots, sweet potatoes or potatoes, turnips, and mushrooms)
- Olive Oil
- Broth (not necessary, but can be quite flavourful)

How to Cook a Pot Roast
Cooking a pot roast is really easy, because the preparations are simple and the instant pot (or oven) does most of the hard work – cooking.
All you have to do is prepare the roast (seasoning) and chop accompanying vegetables.
1. Prepare the roast
Roast Seasoning
Salt and pepper each side of the roast.

Garlic Holes
Peel garlic and slice in quarters.
With a knife, poke a small hole into the roast large enough to slip a garlic quarter into it.
Continue with the garlic holes to all the sides of the roast.

2. Loosely dice vegetables
Prepare vegetables you have on hand for a 1 hour pressure cook.
Imagine it as if the vegetables would be cooking in the oven for 6-8 hours.
Hard vegetables will take longer to cook and can be diced to a medium size (carrots, turnips), while some soft vegetables may not require any dicing (like mushrooms).

3. Sear roast (optional)
Add oil to Instant Pot and turn on “Saute” button.
Add the roast into the pot and sear each side of the roast until brown (roughly 3-4 minutes on each side).
4. Cook roast
Add in vegetables to the Instant Pot, starting with the “hard vegetables” first and the “soft vegetables at the end”.
Pour in broth if you are using it for additional flavour.
Put on the lid and make sure it is sealed and ready for steaming.
Pressure cook on high for 45 minutes.
Once finished cooking, allow pressure to steam naturally if able.

- 1-2 cups Beef Broth Optional
