The One and Only Healthy Carrot Cake Recipe You Need
This healthy carrot cake is the one and only recipe you’ll need. No more refined sugars, only tasteful honey and apple sauce fill this cake’s sweet requirements.

What is considered a Healthy Carrot Cake?
It was our son’s first birthday this past week, so a birthday cake was in order. We want him growing up on minimal refined sugar, because we also try to steer clear of them as best we can. So I was on the hunt for a good birthday cake that he could munch on, but that our guests would love.
I compared a few recipes online and tried some substitutes in ingredients, and this recipe was born!
Directions for the Cake
The directions are fairly easy. As with any cake, mix together the dry ingredients, and then the wet ingredients. Slowly add the dry ingredients to the wet, and stir until all is well combined. Find a more detailed description below.
I started by making homemade applesauce! Peel and core apples, add them to a pot with water and simmer until soft. Then mash them with a masher – done!

Preheat the oven to 350F. Next, prepare your baking pans (I use 9 inch oven pans) by wiping the surface with butter so that batter doesn’t stick while baking.

In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon. **Make sure you measure the flour correctly (scoop and fluff into measurement cup!)

In a large bowl, beat eggs on high for 1 minute. Then add the honey and beat on high for another 4 minutes.

Melt your coconut oil slightly and stir it in with the egg, and add the vanilla and apple sauce.

Add half of the flour mixture to wet ingredients and stir it in. Then add the other half of the flour and stir it together until all is well combined.

Stir in carrots and the nuts.

Divide batter between the two 9 inch pans.

Bake for 30 minutes or until no batter sticks to a fork when inserted. Then remove the pans and allow them to cool before removing the cakes.
Directions for the Cream Cheese
The icing is simply cream cheese, butter, honey, vanilla and milk!

Start by beating the cream cheese and butter together.

Next, add the honey, vanilla and milk, and beat until well combined.

Finally add the arrowroot powder and beat for another minute. Ta-da!

- 2 cups flour
- 1 tsp baking soda
- 1+1/2 tsp baking powder
- 1/2 tsp salt
- 1+1/2 tsp cinnamon
- 4 eggs

- 1/2 cup coconut oil melted
- 2 tsp vanilla
- 1 cup apple sauce
- 1 cup walnuts crushed
- 3 cups carrots
Cream Cheese Icing
- 1+1/3 cup cream cheese
- 1/4 cup butter salted
- 3 tbsp honey
- 2 tbsp milk
- 2 tsp vanilla
- 2 tbsp arrowroot powder
