South African Boboti and Yellow Rice

This tasty curry mince is one of my favourite oven meals. Not only does it always taste delicious because it is so well spiced, but also because it makes the best leftovers. We enjoy it for days afters it been made, which makes it a good dish to take on long drives or camp trips because it pairs so well with rice, bread, wraps or a salad.

Equipment

  • 1 Oven Dish 9 x 3 inch worked well
  • Mixing Cups and Spoons or volume scale
  • 2 Mixing bowls 1 medium and 1 large
  • 1 Mixing jug
  • 1 Large pot
  • Wooden spoon

Ingredients

Boboti

  • 1 Bread Slice Sourdough is the best!
  • 1 cup Milk 250ml
  • 1 kg Minced Beef 2.2 lbs
  • 1 Onion Finely chopped
  • 1/2 cup Raisins 125ml
  • 2 tbsp Apricot Jam 30ml
  • 2 tbsp Fruit Chutney 30ml
  • 3 tbsp Lemon Juice 45ml
  • 2 tbsp Curry 30ml
  • 2 tsp Turmeric 10ml
  • 2 tsp Salt 10ml
  • 1 tbsp Oil 15ml
  • 3 Eggs
  • 6 Bay Leaves

Yellow Rice

  • 2 cups Water
  • 1 tsp Turmeric
  • 1 Star Anise
  • 1 cup Rice

Instructions

Boboti

  • Measure milk in jug and add the bread slice to soak
  • After several minutes, squeeze the bread dry and add it to the large mixing bowl
  • Reserve the milk for later
  • Dice the onion fine
  • Mix together the bread, beef, onions raisins, jam, chutney, lemon juice, curry powder, turmeric and salt
  • Heat the oil in a large pot and begin to brown the meat
  • Once the meat is browned, pour it into the oven dish and flatten slightly
  • Whisk eggs into the milk until incorporated
  • Pour milk and eggs over the meat
  • Top with bay leaves
  • Bake for 40-50 minutes at 350°F (180°C)

Yellow Rice

  • Measure water into pot as per package directions
  • Add turmeric and star anise to water and bring to a boil
  • Add rice and cook until soft (but not mushy)
  • Serve with Boboti curry mince
