Healthy Carrot Cake and Icing

Ingredients

Carrot Cake

  • 2 cups flour
  • 1 tsp baking soda
  • 1+1/2 tsp baking powder
  • 1/2 tsp salt
  • 1+1/2 tsp cinnamon
  • 4 eggs
  • 1 cup honey
  • 1/2 cup coconut oil melted
  • 2 tsp vanilla
  • 1 cup apple sauce
  • 1 cup walnuts crushed
  • 3 cups carrots

Cream Cheese Icing

  • 1+1/3 cup cream cheese
  • 1/4 cup butter salted
  • 3 tbsp honey
  • 2 tbsp milk
  • 2 tsp vanilla
  • 2 tbsp arrowroot powder

Instructions

Carrot Cake

  • Preheat oven to 350F
  • Prepare pans by wiping the surface with butter so that batter doesn't stick while baking
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon
  • In a large bowl, beat eggs on high for 1 minute
  • Add honey and beat on high for another 4 minutes
  • Stir in melted coconut oil, vanilla and apple sauce
  • Add half of flour mixture to wet ingredients and stir in
  • Add other half of flour and stir until well combined
  • Stir in carrots and nuts
  • Divide batter between two 9 inch pans
  • Bake for 30 minutes or ntil no batter sticks to a fork when inserted
  • Remove the pans and allow them to cool before removing the cakes

Cream Cheese

  • Beat cream cheese and butter together
  • Add honey, vanilla and milk and beat until well combined
  • Add arrowroot powder and beat for another minute
