Preheat oven to 350F
Prepare pans by wiping the surface with butter so that batter doesn't stick while baking
In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon
In a large bowl, beat eggs on high for 1 minute
Add honey and beat on high for another 4 minutes
Stir in melted coconut oil, vanilla and apple sauce
Add half of flour mixture to wet ingredients and stir in
Add other half of flour and stir until well combined
Stir in carrots and nuts
Divide batter between two 9 inch pans
Bake for 30 minutes or ntil no batter sticks to a fork when inserted
Remove the pans and allow them to cool before removing the cakes
