Chop your onions and mince the ginger
Heat the peanut oil in a large pot and wait until hot
Add the mince meat and break it apart into chunks
Once the mince is cooked, add the onions and ginger and cook for 5 minutes
Stir occasionally until the onions are tender
In the meantime, prepare your sauce
Once the onions are tender, pour in the sauce and let it simmer with the meat for 10 minutes
In the meantime, prepare the cornstarch with a 1/4 cup water
Add the frozen peas to the mince and stir in
Turn down the heat so that the mince is lightly simmering but not boiling.
Add in the corn starch but ensure that the meat does not come to a boil. This will inhibit the corn starch from thickening the sauce
Stir often to thicken the sauce
Once sauce is thickened, crack 5 eggs into mince and stir slightly to cover them with liquid and meat
Cover the pot and cook the eggs for 3-5 minutes with the lid covered. This time will give you a soft-medium boiled egg.
Once the eggs are cooked, remove the pot from the heat
