Mince Dinner with Soy Sauce, Eggs, and Bone Broth

Regular old mince meat takes on a whole new realm of flavours when combined with soy sauce, eggs and bone broth. This is one WOW dinner that can be made in very little time.

Ingredients

Cooking

  • 1 tbsp peanut oil
  • 1 lb mince
  • 1 onion diced or sliced
  • 2 tbsp ginger minced
  • 2 tbsp corn starch
  • 1 cup frozen peas
  • 1 tbsp sesame oil optional
  • 5 eggs

Sauce

  • 2 cups bone broth
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1/8 tsp white pepper
  • 2 tbsp oyster sauce or fish sauce
  • 2 tbsp Shaoxing wine or dry sherry

Instructions

  • Chop your onions and mince the ginger
  • Heat the peanut oil in a large pot and wait until hot
  • Add the mince meat and break it apart into chunks
  • Once the mince is cooked, add the onions and ginger and cook for 5 minutes
  • Stir occasionally until the onions are tender
  • In the meantime, prepare your sauce
  • Once the onions are tender, pour in the sauce and let it simmer with the meat for 10 minutes
  • In the meantime, prepare the cornstarch with a 1/4 cup water
  • Add the frozen peas to the mince and stir in
  • Turn down the heat so that the mince is lightly simmering but not boiling.
  • Add in the corn starch but ensure that the meat does not come to a boil. This will inhibit the corn starch from thickening the sauce
  • Stir often to thicken the sauce
  • Once sauce is thickened, crack 5 eggs into mince and stir slightly to cover them with liquid and meat
  • Cover the pot and cook the eggs for 3-5 minutes with the lid covered. This time will give you a soft-medium boiled egg.
  • Once the eggs are cooked, remove the pot from the heat
