This rhubarb cordial recipe is made of fruit, sugar and water but it feels SO FANCY. This is a great way to use up loads of rhubarb and also drinking your daily intake of water!
Rhubarb season is perfect timing for us, because we will have a lot of drop in visitors coming by this week. My favourite part about this recipe is that it can be made ahead of time and stored in the fridge, so we can make up quick drinks when guests arrive.
Ingredients for Rhubarb Cordial
6 rhubarb stalks
1 cup of sugar
1 cup of raspberries
2 Lemons and their zest
Sparkling water
Mint leaves
How to Make Rhubarb Juice
Our rhubarb plant is giant and it is producing so much right now so it feels like the perfect time to use up A LOT of it (and not just for rhubarb pie..) That’s when I make my favourite summer time drink: rhubarb cordial.
Rhubarb cordial is a fancy name for a combination of fruit, sugar and water. This is a nice summer drink that feels sophisticated, but is really very simple and made with soda water.
I appreciate that it uses up a significant amount of rhubarb because we have a lot of rhubarb growing in the garden right now. Check out our summer garden here.
#1 Cut the rhubarb stems 1/2 inches from the stem
Start by cutting the rhubarb stems about 1-2 inches from the root. Chop off the leaves and leave them right in the garden. I like to use them to cover some other areas that are open in the garden space so that they can suppress weeds or even be used as compost over time.
I chop my rhubarb stems about 2 inches thick and toss them in a pan.
Add sugar because rhubarb is quite tart and the sugar is necessary to combat that really tarty taste.
Grate the zest of two lemons. Make sure they are organic, because else the lemons could have been sprayed with pesticides and you don’t want consume that.
Squeeze the juice from the lemons into the pan with the zest. Add water and raspberries.
Bring the content to a boil on the stove and then turn it down to simmer for 20 minutes.
After 20 minutes, allow the mixture to cool. Store in the fridge until you are ready to use it, or pour a drink right away. It should be good for a week or so.
To make the drink, fizz soda water in your Soda Stream.
Scoop about 2 tbsp (or more if you’d like) of the mixture into a glass and fill it with soda water. This couples really nicely with some fresh mint and a few frozen raspberries. Serve to your guests and enjoy.

Ingredients
- 6 rhubarb stalks
- 1 cup sugar
- 1 cup raspberries
- 2 organic lemons and their zest
- 1/2 cup water
- 500 ml sparkling water for two small glasses
- mint leaves
Instructions
Make the Rhubarb Mix
- Cut the rhubarb stems about 1-2 inches from the root. Chop off the leaves and leave them right in the garden
- Slice rhubarb stems about 2 inches thick slices and toss them in a pan
- Grate the zest of two organic lemons
- Squeeze the lemon juices into the pan and add their zest into the pan as well
- Add sugar, water (not the sparkling water just yet) and raspberries
- Bring the pans contents to a boil on the stove. Once boiling, turn down to simmer for 20 minutes
- After 20 minutes, allow the mixture to cool
- Store in the fridge in a air tight jar
Make a Rhubarb Cordial Drink
- Add 2 tbsp of the rhubarb mix to a glass
- Fill the glass with soda water
- Add raspberries and mint leaves
- Serve fresh!
